Two less porkers running wild

Post by sam03 » Wed Apr 01, 2015 10:57 pm

I picked off two porkers this evening. They had over 1" of fat all the way around. They were very healthy but covered in ticks.

Dirt napping!

Cleaned and in the freezer.

Good job! Y'all have enough swine's flesh to last a while. When you're done processin', what cuts and sausages will you have? This would make an interestin' tutorial.

We grill and crock pot most of it. I skin them cut out the back straps and shoulder/legs and dump the rest. I grill the whole shoulder or leg and streaks that i cut from the back strap. Or crock pot the meat and make spicy pulled pork. Great to come home with dinner made and the house smells like BBQ. These last 5 went to a low income area near me where every last bit is cleaned and eaten.
