Breakfast pie

Breakfast pie
Not sure if I ever posted this recipe before. It's easy to do and fairly cheap
Get the 2-pack of frozen pie crusts.
Cook 2 pounds of crumbled sausage(I had sweet Italian that I made this summer)
~drain and let cool
Crack and beat 1-dozen eggs
Dice 1 small onion, 1 tomato, and 1 bell pepper
1/2 cup cheddar cheese
1/4 cup butter milk
seasoning of your choice
Beat the eggs and buttermilk up and then fold in all ingredients to make sort of a 'batter'
Spoon the mixture into the pie shells
~You will have a bit of the mixture left. Put that in a ziploc and freeze for a future omelette
Bake at 325* for about 45 minutes. Check center with a toothpick to see if its done.
Let cool, and wrap in plastic cling wrap and aluminum foil and freeze. Just needs to be heated up at camp, and slice like a pie
Here is a piece with some srirachi sauce

My wife does something like that only without the pie crust. She cooks her's in a cassarole dish. Man it looks so much better with the pie crust. I ain't gonna tell her though... But I'm thinking this will have to be done SOON! Maybe I'll suprise her one morning with breakfast. Thanks Allen

Allen, I used your recipe for our men's breakfast this morning substituting my homemade venison sausage for your Italian sausage. Let me tell you, it was awesome. It was a big hit with the guys. Keep posting these good recipes!
