Wood Duck Breast

My son-in-law went duck hunting Monday morning with his dad and brought home 1 wood duck. I told him he should bring it over and we would throw it on the grill. I had a new recipe I wanted to try. So he brought it over, cleaned it up and cut the breast out.

We then cut the breast meat into chunks and wrapped each piece with a slice of jalapeno, pepper jack cheese and bacon. Secured everything with toothpicks, sprinkled with a little salt & pepper and tossed it on the grill.

After cooking for about 10 minutes the meat was an awesome medium and tasted amazing. Sorry I didn't get and pictures. It went fast!

We ate it with some raw oysters by the fire out back and an Italian Wedding soup my daughter had made from scratch. Man it was a great feed!

Ducks are some fine eats.......and coots too.

Taste like Marsh hens, i.e. salt water mud chicken.

Only hunted, shot, cooked and ate marsh hens i.e. coots once, if you know what I mean! NASTY!
