what a pig roast we had Saturday. We had some Latin American friends cook the hog and join us. wow It was the best I have ever eaten. It fed 20 people with very little left over. Fried plantains-"maduro" , black beans and rice. I am taking some to Michigan tomorrow to show my "yankee" friends what they are missing. anyways here is the start and the finish. That box is called "La Caja China". Chinese box. I've got one of them that I haven't fired up yet. But yes they make the best roast pork you ever had. The skin is the best part. Comes out red and crispy and is basically pig candy!

Man that looked great! Was that a wild pig? I didn't see any skin. :toast

yes, it was hog my son in law shot-partially. Long story, but his shot broke the bottom jaw off. chased it for 4 hours before the coup de gras. that was some great eatin'. the friends who cooked it said a wild hog should be skinned before roasting??. I don't know but we did get some cracklins. who am I to argue.

La Caja China hog is pretty amazing! Takes some time and work but well worth it!

Those things are also called "Cajun Microwaves" and there are plans online to buiild your own, or places to order kits, etc.

Yeah, I've always heard you had to skin wild hogs before roasting whole. Too much hair i guess. Glad it worked out for you man that looks like it tasted great. :toast

Cajun Microwaves is a way overpriced version of the Caja China.
Same sized Caja costs like 400 bucks

Well either skin or shave it Well it actually scalding and scraping the hair off. Done it many a times. Yea I don't particularly like the Latin seasoning. Bad thing is I am married to one and everyone says hers is the best. I have roasted a lot of pigs 2 this year alone.

Here some pictures of three different pigs the one showing hair on then hair of was smoked. The other are roasted.

I can smoke them in my smoker or roast then.
My wife probably has the recipe may be I can get here give it to me.
