Looks good, I am still holding off on doing the reheat/reblend trick after sitting a couple of days. I have tried all 3 of mine and they are good, very distinct flavors between them.

I have found the sauces completely change flavor after initial tasting, then sitting in the fridge for a couple days. SOme more dramatic than others. The red sauce, I had to add more salt. The habanero sauce, I had to add a bit more sugar as the hab flavor was overpowering

Latest concoction. Peach/apricot habanero BBQ sauce. In the canner now.

I have Serrano, Jalapeño, Poblano, and Habanero peppers growing out of control. Need to start finding ways to use them.

Finished up last night. Already have some orders from family, friends and co workers, that's the reason for the small bottles my wife picked up. I wasn't giving up the mason jars. I need to label these things, the wife almost confused the hot sauce for my bar-b-cue sauce last night while prepping a burger...

L2H, I have to give you props...that recipe of yours is $. As fast as I can give it away, my wife has been recouping costs for bottles and ingredients from some family and close friends. Its been a bit hit so far. I think the problem with most store bought hot sauce is its all about the heat, the flavor comes 2nd. Your recipe, after a good amount of smoke, is all about the flavor 1st. That's a blessing and a curse, the flavor pulls you in and then you realize....d*mn that sh*t is hot, I ate too much!!

Can you post a basic recipe? I have some habs that I need to use up. I also have some frozen strawberries from when we went strawberry picking this year. I'm thinking a strawberry habanero combination.

I separated the peppers into pie tins and put them in my smoker for a couple hours. Not necessary, but just adds another layer of flavor.
For the Peach/habanero:
Saute peppers in a splash of oil, with onion and garlic, salt & pepper
Added can of sliced peaches in heavy syrup
about 1/2 cup of vinegar (ACV)
simmer together, then blend (blender of immersion stick blender)
Let cool for a couple days. reheat, reblend (taste and adjust seasoning), then bottle it up or pressure can
Red sauce
Saute peppers with garlic, onions, and a carrot (almost every hot sauce recipe calls for carrots added)
I added a can of Ro-Tel diced tomatoes w/ green chilis.
about 1/2 cup ACV. hen blended and reheated. I added about a cup or so of regular ketchup to smooth it out
Then cool for a couple days, reheat, reblend, adjust seasoning and bottle or can
I also just made a peach/apricot/habanero bbq sauce a few days ago. I used the canned fruit and fresh habanero peppers, and a bbq sauce recipe my dad made that I can't divulge(family secret)
Mixed all that together and cooked, then pressure canned. That will be a very good pork and rib glaze. Got some in the crock pot now on a few pieces of pork

A couple things I will add:
~I would do all this cooking outside if you can. The pepper fumes are serious business and will peel your sinuses
~Wear a double latex/nitrile glove on the hand you will be holding peppers with when chopping/cutting
~A habanero sauce can end up with a very pungent/bitter strong habanero flavor that turns some people off. That is the reason I suggest letting sauces sit in the fridge for a couple days. The first day I did not taste that flavor. After it had sat, it was quite noticeable. A bit of sugar added to the sauce will counter act the flavor

You all have inspired me. I have jalapenos, Thai hot and Oriental peppers. I still have some papya frozen from Dec so ... I am going to include that too. This just looks too good not to try!!!
