I let them go about 45 minutes at about 150-175 with no smoke to dry them out. They say with these collagen casings, that they have to be completely dry before you add any smoke or they will turn rancid. Now I got a pan of lump charcoal and apple wood chips in there and lettin her rip, around 200* now. Salivating...

Okay now I've got to go buy my own sausage stuffer and make my own sausage. It's kind of like a fad sometimes I want everything ground sometimes I want it all cubed I think now I might want a lot of sausage

Well, I will rate this project a success. These things are out of sight. Only thing I will do in the future is test a piece for flavoring before I stuff them. I usually do that with sausage, and not sure why I didn't this time. Nothing wrong, I just could have tweaked the seasonings a tad. But still very very good

Here is them out of the smoker before slicing

I started off with 6.5 pounds of ground meat and finished weight was just over 4# of snack sticks. I took some to my buddy (one that just had brain surgery) and he said they were off the chart, and better by far than anything he ever bought in the store.
Will definitely be doing these in the future. No wild hogs ever get a free pass ever again!!!

Honestly no secret to it. I just followed the directions on the kit. Only thing you gotta be careful of is the meat temp and the smoker temp. I can see where this could go bad real quick if there is too much heat or smoke. Very low and slow on these, and a good meat thermometer.

I may take a pack of them and put them on the dehydrator and do an experiment to see how they turn out. Sorta like a jerky stick.

What do you think the shelf life would be on those out of the fridge ? Example: a few days in a hunting pack. Normally I take more care with pork but with the cure and smoke and all they may be ok. They would be good on those all dayers.

Heck yea Allen there making me hungry looking at them. did you have some of the ones John had? If so how do they compare? Oh by the way Ill take a link.lol I think his was a mix of pork and venison

No idea what the shelf life is. What I did is put 4 sticks (cut to 6") in a quart vacuum bag, vacuum seal them and put them in the freezer. I think I ended up with about 10 packs, plus ends and pieces you are left with from cutting
