Duck Etouffee
Through a generous donation of a local hunter nearby I was able to make some duck etouffee. I think I rushed the roux and had to cook it a little faster than I should but I had people waiting.
The picture could be better but you get the idea.
My wife and oldest daughter turned their noses up but my 2yr old dug in. She even took the last piece of duck off my plate. Then she threw a fit because she wanted more "ficy" (spicy) and we had cleaned the plate between the two of us.

Now that looks tasty! How about a recipe. I'm not really a duck hunter but one of my son-in-laws is and I've only eaten the breast grilled and wrapped in bacon & jalapenos. I'd like to try this out next time he brings some to the house.

No problem. Here's the recipe:

I didn't boil the duck but I did marinate it in buttermilk overnight. Next time I'll use peanut oil for browning the duck and making the roux, and take longer to make the roux.
