I saw this somewhere this morning, and decided to go make it for breakfast. I have to say it is really really good, and quick and easy. And healthy too
1 banana
2 eggs
splash of milk
pinch of cinnamon
That's it. Just mash and whip it together till it's the consistency of pancake batter. Cook just like a pancake in a buttered pan or skillet. I made one huge cake instead of several smaller ones(filled the entire bottom of a green skillet). Topped with some local honey

I'll have to give that a try, I am sure the boy will love it. Got a guy at camp that got me hooked on putting peanut butter on pancakes, now that will stick to the ribs.
