I love fresh king steaks also smoked king
grill
Take a fresh steak 1.5 inches thick soak in olive oil lemon juice season with Cajun and lemon herb.
When you flip it coat it with the oil and seasoning.
don't worry so much about the over cook part the oils in king keep them moist.
This is also great chipped up and on a salad with ranch and cheese
or with onion relish topping.
All these post about fish and i want to go fishing.

I will cut mine in 1.5" steaks also, marinate it in Zesty Italian Salad Dressing, put lemon herbs over it and cook it on the grill. I have never had it over salad, I will have to try that.

I've cooked them on the grill slathered down with mayonnaise and covered with Everglades Seasoning. The mayo will melt off leaving the meat juicy and awesome! Then squeeze a little fresh cut lime over it and you're good to go! Man, making me hungry here. I also like it smoked and chipped up into fish spread. Nothing better on a cracker with some Texas Pete or Crystal's hot sauce.
