I am heading up to camp tomorrow, I could use about half of that this weekend. Fresh bratwurst is the best over an open fire.

boil the brats in dark beer with a chopped red onion for a while, (they won't burn) then grill, yum. just watch out for backfires and cropdusting.

Once you take the brats out of the beer, keep boiling the beer and onions till it reduces into a caramelized paste. Smear that on the bread then place the brat on top. I swear.. the last time I made these I grilled them then put them in a beer and onion bath.
