Hot sauce time again!

Been picking peppers on a daily basis, and putting them in bags in the freezer. I separated them by "red" peppers, habanero's, and "green". I will make a green sauce later on

Started out by de-stemming them and putting them in my smoker for about 3 hours while I was doing other projects

Then in a sauce pot with a bunch of other stuff

After cooking, blending, tasting, cooking and blending more, here is where I am at now. Left side jar is a Habanero/peach sauce. It is extremely hot, but with a sweet flavor. Should be great on chicken wings. Right side 2 jars are a sriracha type sauce

I will let this mellow out for a couple days in the fridge. Then adjust seasoning and re-cook and blend a couple times, then bottle it up in smaller containers
Next up...hot pepper vinegar, dried pepper flakes, and chili powder

You growing any peter peppers this year? If so, I'd like to get some seeds from you. I have a trinidad scorpion pepper plant that's coming back and should be producing in the next few months. I can trade you if you want. I also have some frozen scorpion peppers if you want some. They are super hot.

Not doing any peters this year. They were a cool novelty. Kinda funny to put one by the front door! But I was not impressed with the flavor of them honestly. I have a Trinidad scorpion plant going now. They are HOTTTTTTTTTTTTTT

Next up...hot pepper vinegar

If you want some Hot pepper vinegar add about a 1" of olive oil to the top...

Have you ever grown any datil peppers?

Peppers didn't work out for me last year. Gonna clean out the garden and try again, does anyone have any extra seeds?

This got me motivated to start my batch. Started with 4 gallon bags full. I have the smoker going with two trays and the dehydrator on with a couple of racks full. We are going to do one mild red & pineapple, one hot red and one green. Are you guys doing anything differently when you are making the green sauce?
