Grilled Duck Breasts

Hey, I've had this recipe for a while in my head. My son-in-law went hunting with his father a while back and this is how we prepared the duck he brought home. It was amazing.
Grilled Duck Breasts
2 fresh duck breasts
½ pound of Monterey Jack Cheese
1 whole jalapeno pepper (or green pepper if you don’t like the heat)
2 strips of thick cut smoked bacon (raw)
Sea Salt & Cracked Pepper to taste
Prepare duck breasts by slicing a slit down the middle thickest part. Fill slit with sliced cheese and peppers. Wrap breast in bacon strips (use more for larger breasts) and pin with toothpicks. Salt with sea salt and crack some pepper corns over the whole thing.
Grill breasts over hot coals until meat is medium rare. This will be about the right temperature when the bacon is crispy. Remove and let them rest. Best served with wild rice, lemon garlic green beans and cornbread. Oh, and don’t forget the sweet tea.
